Foraging is one of my hobbies. I really enjoy going for a walk and learning about edible plants and mushrooms. I think the reason I enjoy it so much because of my childhood: I grew up in the Thai countryside where edible wild food was all around. For instance, just a short walk down the road from our home was a wild mango tree everybody in the village would pick delicious fruit from. My family would fish from the beach too and we would cook and eat our catch there. One day, I was fortunate enough to catch a barracuda! All of this taught me that good food is not always bought: we can use nature's larder too -- as long as we are sensible and keep sustainability in mind.
I love the winter chanterelle because it tastes so delicious. Around this time of year, winter chanterelles are everywhere in a nearby woodland. I went out with a friend to see if we could collect some to cook for a meal or two and we found lots. I tried making pasta sauce with them last year and the kids really enjoyed them, but this time I thought I would try something different. I stir-fried some with spicy pork mince and basil and that was delicious too.
